Recipe: Cauliflower & Leek Soup

I whipped this up in my Tefel Soup & Co but have given direction for stove top as well.

Ingredients:

1/2 Cauliflower
1 Leek
3 Cups of Water
3 tsp Chicken Stock
1 tbsp Butter
2 Potatoes
Cream



Method (Soup & Co)

Melt butter in saucepan and add chopped leek.  Once cooked through add to Soup & Co.

Add all other ingredients, except the cream. (Potatoes peeled and chopped, cauliflower chopped)

Select P1.

When Soup & Co beeps, it's ready to serve, simply add cream to taste.  (I used a cup of cream to this quantity).



Method (For Stove Top)

Melt butter in saucepan and add chopped leek.

Add all other ingredients, except the cream. (Potatoes peeled and chopped, cauliflower chopped)

Simmer on a low heat for 45 minutes.

Remove from stove top and use blender to create desired consistency.  Then add cream.







This was a huge hit in our house.  Perfect for warming the inside on these cold winter nights.

  2. Oh that sounds and looks delicious! I am more than a little bit obsessed with leeks! When I was pregnant I craved them and I've been thinking about them constantly ever since!
