Recipe :: Lemon Slice

There was a bag of lemons sitting on the bench at kinder the other day and I though 'might as well grab a few'  not that I had any plans.

Then the thing is, you instantly think, got lemons might as well make lemon slice, but truth be known you actually only need 1 lemon.  What's with that?  They're flavoursome suckers!

So if you're keen:

Ingredients

Base

• 1/2 cup sweetened condensed milk
• 100g butter
• 1 Packet of Granita biscuits
• 1 cup desiccated coconut
• 1 grated lemon, rind

Lemon icing

• 2 cups icing sugar mixture
• 40g soft butter
• The juice of the lemon

Method

Grease and line a slab pan. Place condensed milk and butter in a small saucepan over medium heat. Cook, stirring, for a few minutes or until butter melts.  Place biscuits in a food processor and process to fine crumbs. Combine crumbs, coconut and 2 teaspoons lemon rind in a bowl. Add hot butter mixture. Stir till combined.

Press biscuit mixture into pan. Refrigerate for 1/2 hours until firm. 

Make lemon icing: Place icing sugar mixture, butter and lemon juice in a bowl. Beat with a wooden spoon until smooth. Spread icing over slice. Refrigerate for a further 30 minutes or until icing has set. Cut into pieces. 

Serve

The thing is I get mixed reviews on these, you either love them or you hate them.  My boys (well Tom) told me 'these are discusting'  but the ladies at work said 'this is the best lemon slice'  so you know, you be the judge.
