When I was losing weight, my favourite meal was a low fat chicken rice.
I've always loved fried rice and this is a healthier take on that.
Ingredients:
500g Chicken Mince
2 Cups of Cooked Basmati Rice
Vegetables: I prefer capsicum, mushroom, onion, peas and corn, sometimes I add tomato and spinach
Soy Sauce
Method:
I prepare the rice in my rice cooker.
Whilst this is happening, I prepare all fresh vegetables, chopping up into reasonable size pieces. I fry this on the stove top using spray oil.
Following this I add the chicken mince. Once brown and cooked I add the two cups of cooked rice.
In the last few minutes I add the frozen vegetables.
Mix together and add soy sauce to your liking.

This is a really simple dish to make and is great for reheating purpose.
It's incredibly healthy and I lived on it when I was focusing on losing weight.
I tend to be lazy and either skip lunch or eat crap on the run, making this at the start of the week really helped me to stay on track.
And now I just eat it because I love it.

This sounds like a great idea! I don't actually eat rice (weird I know!) but my husband would absolutely love this!!

ReplyDeleteRice with a similar recipe to this is our households all time favourite fall back meal. YUM. I had never thought to use chicken mince though! I will be giving it a shot next time.
