The other week I made Lemon Slice but I still had lemons on hand. I was also preparing sweets for hubby's 40th and though a lemon dish would be well suited amongst the chocolate offerings.
Now, as you'd know the 'lazy chef' in me opted for a pre-purchased tart base. But if you were wanting to make your own base a marie biscuit / butter base, like that of a cheese cake.
For interests sake: 200g Marie Biscuits + 100g butter, create crumbs with the biscuits, melt the butter, mix.
Onto the tart ~
4 lemons
4 eggs
1 cup castor sugar
130g butter, at room temperature
Grate the rind of 2 lemons. Then juice the four lemons, you want in total 1 cup of lemon juice, but don't panic if you have a little less, that's fine.
In a separate bowl whisk the eggs and sugar together, add the lemon juice and rind.
Then in a double saucepan (or heatproof bowl over water) cook for up to 20 minutes until thick.
Once removed from the heat, add butter and mix until combined.
Poor into your tart base and allow to set. I'd give it at least 3hrs, overnight is perfect.

I love ANY lemon dessert, especially a good tart. Lucky I have a lemon tree :)
